Really, it is far safer to have an environment that is full of a wide range of bacteria, than to have no bacteria at all, since such an empty environment is easily colonized by a single arrival, often a horrifying one. Staph for instance is in the air wherever you go, but it isn’t more fit for reproductive success than the harmless swarms of other bacteria, so it stays in small population, and your body can just worry about fighting with the tiny numbers of ungood visitors mixed in with the massive volume of harmless ones.
Fermented products are all about bacteria that are in your food. Our bodies are very good at digesting these bacteria, and the nutrients that they produce.
The most healthy japanese foods for instance are all fermented soy-based products. There was even a news item warning recently that some soy products have negative health effects, yet fermentation removed these issues.
